A delicious conversation with charcuterie board Goddess, Kacey Jamison.

Ladies, meet Kacey Jamison, owner and operator of The Traveling Tray.
We first came across her fabulous business when mutual friends posted a photo on Instagram that looked absolutely divine. I was staring at the most gorgeous charcuterie board that had meats turned into rosettes; honeycombs, chocolates, and all sorts of little goodies places about. I immediately went down the rabbit hole and looked up Kacey’s page. A click, heart, and giddy phone call to Libby later, we were purchasing our very own sample to see for ourselves if the product was as beautiful in person.

First of all, Kacey is the sweetest, most lovely woman. She delivered our charcuterie board in a wonderful package (side note – she rents out the serving platters if you do not have one – how awesome is that!) and walked us through the product. This was no average spread. We had locally sourced honey, jams, pickled asparagus, and so many more little treats, our kids were salivating staring at the box. They didn’t have to wait exceptionally long to try, and once we were done shooting some product shots, we all dove in.

Here is our Q&A with Kacey, to share her inspirational story with you:
LUXYMOM®: We are so inspired by your story and that you just went for it during COVID-19. When did you officially launch and what was your inspiration?
Kacey: I officially launched in May of 2020 and I always looked at other folks that had something like this and thought, “I can do that, and I want to do that. I’m going to do that.” So, I did it.
LUXYMOM®: THAT is incredibly inspiring. How has it been since starting?
Kacey: It has been really great. I really like that I can inspire people and open them up to new types of foods. When people tell me they have never had Prosciutto before, it makes me think bigger and how I can constantly reinvent my product. The possibilities are endless.

LUXYMOM®: What do you recommend folks should drink with your delicious offerings?
Kacey: If they are focusing mainly on meet and cheese, they can go towards wine – a robust red or a delicious Pino Grigio. But you can certainly do a sparkling, due to the fantastic fruits we mix into the charcuterie board. There is really no set guideline, and that is one of the wonderful elements about our product. We offer so many different items that there is something for everyone.
LUXYMOM®: Do you change out the menu a lot, or are the boards pretty standard?
Kacey: I am always reinventing. I want my guests to experience something new every time they come back, so I add something new to the box each time I create one. The basic elements are there, but I want people to be inspired and intrigued when they open the product. Food should be explored, and your palate constantly developed, and I have the opportunity to share my love and knowledge of these amazing foods with folks that may not have that same knowledge base. It is exciting.
LUXYMOM®: What are your go-to items that you feel are must-haves?
Kacey: I always try to do the “staples” aside from my specialties. My staples are a soft, hard, and medium cheese in the box. I am always mixing it up, but this could be a Parmesan, Manchego, or Burrata, for example. For meat, we love Prosciutto and Sopressata along with other specialty cuts. I always add olives, crackers, assorted nuts, fruits, and I have I have a great working relationship with a local honey distributor.

LUXYMOM®: What is something you want your guests to take away from your product?
Kacey: I want my guests to taste something new and discover a food they never knew about. I think that is the great thing about a charcuterie board – there is so much variety that you can try different flavor combinations in one place. That is why I like changing it up all the time. It is a new adventure every time a guest returns.
