New food ideas to transform your weeknight meals.
If you’re anything like me, these past few months may have thrown you into a food rut – and while preparing the same meals over and over again makes things dependable and consistent, it does not make things exciting. So we’re curating some new food ideas to help transform your weeknight meals into something a little more adventurous.
Let’s use charcuterie boards as an example. Is there a soul alive that doesn’t love cheese and prosciutto? They are delicious! But what if I told you about a new twist on charcuterie that’s fun for the whole family?

New variations on charcuterie
The first variation of the all mighty charcuterie is a Pancake Board. This is amazing to make, it’s super simple, and my kiddos love it. All you need are mini pancakes, (thank you Eggo Minis) – or, if you are so inclined – grab some instant pancake mix and whip a few of these up in no time.
Place them in the center of your board. The rest is simple. Place toppings all around, like you would with a regular board – strawberries, blueberries, bananas, sprinkles, butter, whipped crème, chocolate chips, syrups, and of course bacon. Boom! A pancake board that will please the whole fam.
We also tried the newly popular french fry and taco boards. These were fun and festive, especially because the littles were able to make them with me, and it took no time at all.
Apple Nachos
Nachos are always a favorite at my house, but with the new year, we’re trying to be a little healthier with our snacks. We’ve paved the way to health with compromise.
Instead of traditional nachos, we make Apple Nachos. This tasty treat literally takes less than 5 minutes to make, and it’s super tasty. Gather your favorite apples – we use Granny Smiths for ours – cut them into slices, and layer the slices like you would tortilla chips.
In place of cheese, guacamole, and the various other ingredients, we’re going to use cinnamon, chocolate chips, coconut shavings, nuts, cranberries, caramel – the world is your confectionary oyster! Simple and sweet, this new treat is sure to please.
Cheesy Mozzarella Onion Rings
Now, for my fried food fans, you better get ready.
